Merlot is often produced as a dry wine. Remember that enjoying ripe fruit tastes such as cherries and plums is never comparable as tasting sweetness owing to sugar levels. A dry wine is one in which the sugar in the grape must be fermented to alcohol by yeast after the grapes have been crushed. In order to make a completely dry wine, all of the sugar must be converted. Residual sugar is a little amount of sugar that is sometimes left behind after fermentation. This could be intentional, to provide a sense of fullness and sweetness to the wine, or it could be due to the yeast failing to complete the maturation.
